My partner did not know if he would like this and ended up eating more than me so I would say it was a success :) It is a good side dish especially with chili or you could add cooked chorizo or bacon to make it more substantial.
8 oz cornbread mix
1 large zucchini, shredded and lightly salted, drain in colander for 30 minutes then squeeze out liquid
1 cup fresh corn (or thawed frozen corn)
1 jalapeno, diced
1/4 large red onion, diced (or any allium would do)
1 tsp chili powder
1 tsp taco seasoning
Salt to taste
3 eggs, beaten
1/2 cup milk
1 1/2 cup shredded cheese (I used pepper jack), divided
Preheat oven to 375. Mix all ingredients except cheese in large bowl. Fold in one cup cheese. Put mix in 8-9 inch greased cast iron skillet (or equivalent pan for baking small cornbread). Bake for 25 minutes, then sprinkle with remaining cheese and rotate. Bake 20-30 more minutes. Cut into wedges and enjoy!
