This is one of our go-to quick summer side dishes that is delicious in its basic form but also can be spiffed up with different vinegars or herbs. We like to make it a few hours in advance and then chill it down in the fridge for a cooling addition to the meal.
Cucumbers (use as many or as little as you'd like)
Red onion (again, ratio can be played around with depending on your preference for onion flavor. For every five cucumbers, I'd use a fourth of an onion.
Balsamic vinegar
Ovlie oil
Salt and pepper
Herbs (dill is the obvious one here, but we've made this with basil, or mint)
Cut the cucumbers into cubes. Mince the onions. Add olive oil and vinegar to taste (remember the 3:1 Oil vinegar ratio rule), then add salt, pepper, and herbs. Mix around, taste, adjust for seasoning and put in fridge for a few hours. We like grilling chicken and serving this dish to accompany it.
