Welcome to Week 12!
It's a good time of the year to make salsa-chop up those tomatoes, onions, garlic, jalepenos, add cilantro, salt and a squeeze of lime, some chips and you're good to go!
Also, we just made a killer zucchini soup. It sounds weird, but it was really easy to make and quite delcious. Saute onions and garlic in some coconut oil, add a lot of chopped zucchini/summer squash and cook until soft. Add a Tablespoon or so of curry powder, some salt, and a can of coconut milk. Bring to boil, then simmer for 15 min or so. Blend until smooth and serve with bread and fried paneer cheese. So good!
