CSA Week 8

Hey Friends!


Another week has come and gone. It’s week 8 here for CSA harvest, which means we’re almost at week 10, which means we’re halfway done with the season! Last week we harvested our garlic, which looks good this year. We’re curing it now, but you can expect to see that in your shares in the future. Also, we have extra beets, zucchini, and cucumbers this week that we’ll take to the dropsites. Feel free to take as much as you want!

Cucumbers

Zucchini-it’s zucchini cake/bread season….also, have you ever tried making zucchini noodles? They are a creative way to use zucchini. I have a small spiralizer for when I make my noodles, but I’ve also made zucchini lasagna and cut the lasagna zucchini “sheets” with a sharp knife too. Here’s a pretty basic recipe for zucchini lasagna.

Beets-You have to try this Chocolate Beet Cake. It’s so subtle and grown up but your kids will like it too.
